A recent study by Dr. Heather Vincent, PhD, has been published online in advance of the print edition of the Journal of Human Nutrition and Dietetics. Her research is aimed to provide guidance for healthy eating, weight control, and obesity related issues.

The University of Florida then interviewed Dr. Vincent about the research study's findings: Eating more plant-based foods, which are rich in substances called phytochemicals, seems to prevent oxidative stress in the body, a process associated with obesity and the onset of disease.
